How to Use Sao Tome White Pepper?
Here are some recipe ideas for using Sao Tome White Pepper in your cooking:
• Sautéed zucchini with Sao Tome White Pepper: sprinkle 1 teaspoon of ground Sao Tome White Pepper on your zucchini at the end of cooking;
• Cheese and Pepper Tartine: crush a few grains of Sao Tome White Pepper on your goat cheese tartine;
• Cucumber Salad: sprinkle 1 teaspoon of crushed Sao Tome White Pepper on your sliced cucumbers;
• Grilled beef ribs: coarsely crush the grains of Sao Tome White Pepper on your meat before grilling over the flame (find the full recipe below);

How Does Sao Tome Pepper Grow?
The small island of Sao Tome and Principe is one of the smallest countries in Africa. Located in the Gulf of Guinea, between Gabon and Equatorial Guinea, the island of Sao Tome and Principe, with an area of 1000 km², is a volcanic chain. This former Portuguese colony is known for its production of cocoa and soon, we believe, for its production of Sao Tome pepper!
Producing in quantity is not feasible in such a small country, so farmers focus on quality production, which is why Sao Tome pepper is so rich in aroma.
Sao Tome pepper comes from the botanical species Piper nigrum. It is carefully hand-picked by pickers between April and November when the grains are red, then dried in the sun. For white pepper, the grains are scalded in water before being dried in the sun to remove their pericarp. White pepper is therefore less concentrated in piperine, which gives it more sweetness than Sao Tome black pepper.

The island of Sao Tome and Principe is one of the smallest countries in Africa. Known for its cocoa plantations, the island mainly lives off its agricultural activity.
Recently, farmers have started growing pepper and attach great importance to its quality, because given the size of the island, producing in large quantities is not possible, hence the quality is essential.
Farmers in the country place a lot of hope in the cultivation of Sao Tome pepper, hoping to make it one of the greatest peppers in gastronomy.
