The 16 long high carbon stainless steel blade features a distal taper and the unit is surprisingly fast in the hand thanks to the balance this imparts. The thick black polyamide nylon scales are nearly indestructible, rot proof, easily sanitized, and as easy to shape as wood.If selecting the Special Grade option we will thin the bone-chopping edge to make it more appropriate for woodwork. Please be warned that a thinned Special Grade edge will no longer be suitable for chopping bone.
